Orange-Cranberry Oatmeal Cookies 
Makes 2 dozen 

1/4 C. butter, softened 
1 c. firmly packed light brown sugar 
1 egg, beaten 
1/2 c. unsweetened applesauce 
1 1/2 tsp. vanilla 
7/8 c. unbleached flour 
1 tsp. baking soda 
3/4 tsp. salt 
3 c. rolled oats 
1/2 c. dried cranberries 
2 1/2 T. chopped orange zest (about 1 orange) 

Preheat oven to 350.  In large bowl, cream together butter & brown sugar until smooth. 
Add egg, blend, then add applesauce & vanilla, mixing just until combined.  Set aside. 

In small bowl, mix flour, baking soda and salt, and add to butter mixture just until
combined.  Stir in rolled oats, then cranberries and orange zest. 

Place dough by heaping tablespoons onto ungreased cookie sheets.  Bake 20 minutes
or until lightly browned.  Remove to wire racks to cool.
